Mom's Pineapple Cookies

Michael Salsbury
Dough:

1 cup sugar
1/2 cup butter
1/2 cup milk
3 tsp baking powder
1 egg
3 cups flour
pinch of salt

Cream the butter and sugar.
Add egg and milk, alternating with flour, baking powder, and salt.

Filling:

1/2 cup sugar
3 Tbsp cornstarch
1/2 tsp salt
1 can pineapple chunks
1 Tbsp butter
1 tsp lemon juice

Bring these to a boil, stirring constantly.  Chill in fridge.

Bake at 350F for 15 minutes
