Recipe: Mom's Tuna Salad

Michael Salsbury

This was the recipe my mom gave me before she died, for her tuna salad. It's sweeter than many I've seen in the market, so if that concerns you, you may not want to make this one.

2 cans of tuna packed in water, drained of the water
3-4 hard boiled eggs, peeled and chopped
Sweet relish to taste
1 Tbsp. finely chopped onions
Miracle Whip salad dressing (the mayo-like stuff)
Olives, sliced into thin slices (optional)

Put tuna, eggs, onions, and olives (if using) into a bowl and mix.

Add Miracle Whip a tablespoon at a time until you reach the consistency you like.

Add spoonfuls of sweet relish until you are happy with the sweetness level.

Serve as a sandwich filling on white bread (optionally toasted).
